Why we curate the packs?
The big open secret as to how we are able to buy from small farms is that we curate your pack for you. Small farms don't supply enough volume to meet the particular demands of a restaurant, grocery stores or even individual consumers. Customers buy single cuts in huge quantities, never the whole animal.
Think about how many steaks a restaurant will go through in a week... The industrialized meat marketplace sends very large amounts of steaks from factory farms to restaurants and, while the grounds and offcuts get sent to fast food joints for hamburgers. Small farms that only process 5-10 Beef a month do not have enough volume meet these needs. Thus they need to sell whole animals. For the sake of our health, well-being and environmental preservation, we want to keep it that way.
In our packs, you get a smaller mix of the whole animal. Tasty Stakes, some special recipe Sausages, Burgers as well as those beloved value-cuts like Roasts and Osso Buco.
